Even though I love dump recipes and my two other chicken parmesan recipes, this one is till my absolute favorite. It is a classic recipe that we make for almost every single one of our dinner guests.

Oh – here are my other two recipes before I forget:

The BEST Chicken Parmesan Recipe (2)

As a perfect compliment to Homemade Spaghetti Sauce Recipe, this recipe for Chicken Parmesan is as good as any you’ll findin an Italian restaurant. And it’s easy, too! I’ve been making this for my wife for years, and she loves it. When she had to change her diet to eating gluten-free, I adjusted a few ingredients to accommodate her. Fortunately, this recipe can be easily made gluten-free (details below).

Here is how to create the ultimate chicken parmesan recipe:

It starts with whole chicken breasts, trimmed. Place them in a plastic freezer bag and pound them to about 3/8 to 1/2 inch thickness using the flat side of the tenderizer. I can usually get three goodportionsof chicken from a normal-sized chicken breast after pounding.

Season with some kosher salt and black pepper, and then prepareto coat them. I use a three-step process: flour, eggs and breadcrumbs.

The BEST Chicken Parmesan Recipe (4)

First, drench in flour and shake off the excess.

Then drop the chicken into the beaten egg mixture.

Once totally covered, shake off the excess and place onto the breadcrumbs.

Press the chicken into the breadcrumbs deeply on both sides, flipping a few times. This helps the coating stick really well, and completely cover every square inch of the chicken.

Now it’s ready for frying. Make sure that the oil is hot but not smoking. Place the chicken in the oil, and fry for five minutes total, flipping halfway through. Remove from the pan and blot excess oil with paper towels (this keepsthe chicken nice and crispy, not oily and greasy!).

The BEST Chicken Parmesan Recipe (7)

Place on a cookie sheet and apply a generous amount of whole milk mozzarella cheese. Many recipes apply sauce first and then cheese, and I used to do this too. But I found that the coating underneath the sauce would get soggy, and the cheese would slide off when slicing into the chicken. Melting the cheese directly on the chicken solves these problems… the chicken stays crispy and the cheese doesn’t move.

The BEST Chicken Parmesan Recipe (8)

Place under the broiler for just a few minutes until the cheese gets bubbly. Add sauce and parmesan cheese and serve!

Here is a printable version of the recipe so that you can add it to your cookbook.

FAQs

What is the best oil to fry chicken parmesan? ›

Olive Oil: I prefer to use extra-virgin olive oil to cook the onion and garlic in, while I use a more neutral oil to fry the chicken. Use your favorite olive oil here, or check out our list of the best olive oil brands.

What is the difference between chicken parmesan and chicken parmigiana? ›

Brace yourself for this one—they're the same dish! Chicken Parmesan and chicken Parmigiana are just different names for the same exact recipe. And, with a name like “chicken Parmigiana”, you might assume that this recipe is Italian. While it has roots in Italy (in a way), chicken Parmesan is all-American.

How do you keep chicken parmesan from getting soggy? ›

Instead of topping the crispy cutlets with sauce and cheese before going into the oven, instead layer the sheet tray with sauce and cheese and place the chicken atop it. This ensures the chicken stays crisp while you still get a bite of cheesy-saucy goodness. I take my chicken parm to the edge of glory (a.k.a burning).

Why does the breading fall off my chicken parm? ›

You Don't Start Dry

The first step to breading chicken is crucial; make sure the chicken is completely dry before starting the dredging process. Using a paper towel, pat the meat dry on all sides. Excess moisture will cause the flour to get soggy and thus will not adhere properly to the chicken.

What oil makes chicken the crispiest? ›

Lard is a great choice for frying chicken because it gives your chicken an excellent flavor and unparalleled crispy crust.

What oil makes the crispiest fried chicken? ›

Think vegetable oil, canola oil, or peanut oil. Don't use olive oil or butter—they both have lower smoke points. The ideal temperature for frying chicken is 350˚ to 365˚, and you'll want to make sure that you bring the oil back to temperature between batches.

Should I fry chicken parm in olive oil or vegetable oil? ›

Hallmark of a great chicken parm is a crispy exterior. You need to have enough oil that can withstand a high smoke point. Like vegetable oil or canola. Do no use olive oil as it has a low smoke point and can't get to a high enough temperature without smoking.

Why does chicken parm use mozzarella? ›

Jokes aside, chicken parm has a long, complicated history argued by many historians for different reasons. Believe it or not, there was not readily accessible chicken in Parma, Italy, so the idea started with thin slices of eggplant covered in Neapolitan tomato sauce and mozzarella cheese.

What is the real name for chicken parmesan? ›

Chicken parmesan or chicken parmigiana (Italian: pollo alla parmigiana) is a dish that consists of breaded chicken breast covered in tomato sauce and mozzarella, Parmesan, or provolone cheese. A quantity of ham or bacon is sometimes added.

What goes good with chicken parmesan? ›

Pasta: Serve Chicken Parm with a side of spaghetti or fettuccine tossed with garlic butter, or you can try this Pasta with Spaghetti Meat Sauce. If you want your sauce meat-free this Vegetarian Spaghetti Sauce is a great option!

Why is my chicken parm not crispy? ›

To maximize crispiness, I use panko breadcrumbs and fry the chicken in a little more oil (about an inch) than you might normally use when making parm. As soon as the cutlets are nicely browned and cooked all the way though, drain them on a rack or paper towels. They're crunchy; this will help them stay that way.

How do you keep Parmesan from clumping in Alfredo? ›

Adding the sauce slowly, bit-by-bit, as you stir the liquid and pasta in your pot will make the cheese melt evenly and avoid clumping.

How do restaurants get breading to stick to chicken? ›

  1. First, with the chicken dry, dredge it in seasoned flour. This will give the liquid in the next step a better surface to stick to.
  2. Next, dredge the chicken through a mix of milk (or buttermilk) and egg. This can also be seasoned if you like.
  3. Finally, dredge the chicken in the final breading mix.

Why does my breading always fall off? ›

Meat is not properly dry

If the meat is wet, it will make the flour soggy. In that case, breading will not stick properly and may fall off when deep frying. Therefore, you must take some paper towels and pat dry the meat on all sides.
