Oma's Tomatensalat is an easy German tomato salad that's such a great way to use the bounty of your fresh garden tomatoes. It's summer in a bowl. So lecker!

It really is one of those best salad recipes because it's so very easy to make. Nothing really says summer like tomatoes.

So juicy, healthy, and so delicious.

You can even turn this salad into a Cherry Tomato Salad by substituting halved cherry tomatoes for regular ones. Looks so pretty!

It's also a great recipe to try out different herbs. Using chives is awesome. In fact, there are times that I replace the green onions with fresh chives from my garden.

Basil would be a nice addition. Parsley is nice as well.

Too many Cherry Tomatoes?

Here's a tip I got from my Mutti.

She would freeze whole cherry tomatoes. Then, when she served a steaming hot bowl of soup in the winter, she would add a frozen cherry tomato into each bowl at the last minute.

For us kids, it was fun to scoop out the soup near the frozen tomato. The soup was nicely cooled down. We had fun moving the tomato around to cool the rest of the soup.

Without the frozen cherry tomatoes, it would be an ice cube that would be added. This, however, would dilute the soup as it melted.

The frozen cherry tomato, as it thaws, actually doesn't change the taste of the soup, until one actually ate it. Perfect for any kind of soup!

Tomatoes:

  • Tomatoes are actually a fruit and not a vegetable.
  • High in vitamin C, they also contain vitamin A, potassium, and iron.
  • Notable is the high lycopene level. (Lycopene appears to act as an antioxidant that is beneficial for our cells.)

There are so many varieties of tomatoes at the market nowadays. All different colors, shapes and types. Use this simple salad recipe to experiment with the different flavors represented by the many kinds available today.

Heritage tomatoes, with their different colors and shapes, are perfect for this salad.

Makes 4 servings

Ingredients:

  • 1½pounds tomatoes
  • 1 - 2 bunches green onions
  • 1 small onion, finely chopped (optional)
  • 2 tablespoons chopped fresh basil
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoonsbalsamic vinegar
  • 2 tablespoonsorange juice
  • 4 - 5 tablespoonsolive oil
  • salt, pepper, sugar

Instructions:

  1. Wash tomatoes and cut into wedges or chunks.
  2. Cut green onions diagonally into 1-inch pieces.
  3. Mix chopped onions, basil, parsley, balsamic vinegar, orange juice, and oil.
  4. Season dressing with salt, pepper, and sugar.
  5. Put tomatoes and green onions into bowl and pour dressing over.

Notes/Hints:

  • Substitute halved cherry tomatoes for regular ones
  • Use dill and/or chives
